EVALUATION OF BASIC CRITERIA FOR WINE PRODUCTION USING DOMESTIC GRAPE VARIETIES WIDELY GROWN IN THE VINEYARDS IN

Objective
The goal of this study was to determine winery properties using Dokulgen, Rumi, Kabarcik, Horozkarasi, Sergikarasi, Bogazkere and Okuzgozu grape varieties obtained from 14 different ecologies abd grown in vineyards in Gaziantep, Kahramanmaras and Elazig.
Materials and Methods
In Southeast Anatolia region, Dokulgen, Rumi, Sergikarasi, and Horozkarasi in Gaziantep and Kilis, and Kabarcik in Kahramanmaras, and Okuzgozu and Bogazkere varieties in Elazig were grown in large amount for wine production.
The samples of each garpe varieties were taken 20-30 kg from two different ecologies.
Seven physical analysis for each sample were done before wine making and then wines were analysed by 20 chemical and 4 sensory analysis.
Results
The results of chemical analysis showed that all of the wines samples made from different grape varieties from 14 different ecologies were found to be appropriate as compared with the standard wines.The results of sensory evaluation showed that Okuzgozu and Bogazdere wines were found to be in good quality table wine.
